Try lace weight yarn, learn left/right slanted decreases, a flexible "lace" bind off and how to block lace. Make a scarf or mantilla. Includes chart reading and symbols.
Bobbles, Cables and Twists
Make an Aran Style Hat. Include chart reading and symbols, cables, twisted stitches, bobbles as well as the classic channel island cast on.

Absolutely the best "take along" knitting. Make a pillow cover by knitting small diagonal garter stitch squares that are joined together as you go.
